American Southern Shrimp Stir Fried Rice

Recipe: American Southern Shrimp Stir Fried Rice This Recipe takes a little time but the results are well worth the effort. It doesn’t taste like the usual fried rice and shrimp, you will find it better tasting. 2 eggs (well beaten) 2 pickled jalapenos, (seeded) diced small. 6 pickled carrot slices, diced small ¼ cup onion, diced small ¼ cup bell pepper (green) diced small 30 raw shrimp (peeled and cleaned) 2 teaspoons soy sauce 1 cup cooked rice 3 teaspoons olive oil 1 teaspoon butter Salt and pepper to taste Set cleaned shrimp aside. Set diced small items aside(jalapenos/carrots/onion/and green peppers. In a hot medium Sauce pan add 1 teaspoon of oil and then add the beaten eggs. Tilt eggs around pan until almost set. Do not brown eggs. Turn over for 30 second and then roll up eggs and place on a cutting board. Slice eggs into ¼ “ strips. Place 1 teaspoon olive oil into a small sauté pan. Heat,(add onion and green peppers) cook until soft. Add other diced ingredients and rice. Heat through with heat on low. Add 1 teaspoon olive oil and 1 teaspoon butter to a medium sauce pan. Heat at medium and add shrimp; cook for 1 minute. Turn shrimp over and add rice and all other ingredients to shrimp in pan. Mix well adding soy sauce last. Mix until all ingredients are heated thru. Serve.
