Noni's Italian Artichokes

Recipe: Ingredients: 6 Artichokes 4 Cloves garlic (or chopped in jar- 3 tablespoons)*never 2 much* Salt (2 and 1/2 teaspoons)*or to taste* Extra Virgin Olive Oil- 1/2 cup total Pepper - (1 and 1/2 teaspoon)*or to taste*- I USE WHITE Red pepper seeds- to taste (I use 1 tsp) Parmesan cheese (sprinkle to taste between the leaves) Lemon juice (1/3a cup or to taste) Italian seasoned bread crumbs (sprinkle generously between leaves in step 2) Step ONE: *6 Firm,closed artichokes -cleaned: (chop off stem to base of choke, manually open leaves with thumb as wide as possible, without ripping, rinse out choke thoroughly, trim ends of leaves with scissors approximately 1/2 inch off) * Fill a wide, deep pot with water to 2 inches, 1/4 cup of lemon juice, 1/4 cup of olive oil, 2 whole cloves of garlic, 1 teaspoons of pepper, free shake of red pepper seeds and 2 teaspoons of salt. *Bring seasoned water to slow boil. *Add clean chokes face down (feel free to tightly place together in pot). Simmer on medium heat for 20 minutes. * Use prong to remove chokes VERY CAREFULLY, drain over pot and place face up in deep baking dish. (let cool for 20 minutes) PREHEAT OVEN TO 350 for 20 minutes STEP TWO *Add 1 and 1/2 inch of fresh water to upright chokes in baking pan *Add remaining lemon juice (sprinkle over and between leaves) - In bowl mix remaining olive oil (never too much), garlic (never, ever too much), salt, pepper, red seeds, parmesan and seasoned bread crumbs. *take fork and squish mixture carefully between leaves, as evenly as possible. *drizzle more oil, cheese, salt and pepper over all chokes, lightly. *Bake for 30 minutes covered lightly with foil. -pull a leaf out (from the middle) carefully after baking time to check for tenderness at the base. If tender-chokes are done. If not, feel free to cook an extra 10-15 minutes covered lightly. ENJOY!!!!!!!!!!!!!!! this is my noni's (grandmother's) recipe from Piemonte, Italy.
