Italian Sausage & Peppers w/Pasta |

1 lb fully cooked Italian sausage links (or chicken sausage for a healthier meal)
1 lb penne pasta
1 large green pepper, chopped in 1" chunks
1 medium onion, chopped in 1" chunks
1 granny smith apple, chopped
1 pkg grape tomatoes
Italian seasoning
Oregano
Basil
Garlic Powder
Mint flakes
Extra virgin olive oil
Salt & Pepper
Prepare pasta water, while waiting for water to boil, chop all produce. In large skillet, drizzle extra virgin olive oil, set on med/high heat. Slice sausage links into bite size pieces. Once water is boiling, put your pasta in the water. Brown sausage in olive oil, add peppers, onions and apples. Add all seasonings to taste. Cook until veggies are a tender crisp, turn heat to a low, then add the tomatoes. When pasta is done cooking, drain, and add pasta to skillet with the sausage mixture. Stir and serve.
