Old Fashioned Banana Pudding
Very easy adaptation on the original that can't be beat.
3/4 cup sugar (divided)... 1/3 cup all purpose flour... dash salt... 3 eggs, separated... 2 cups milk... 1/2 teaspoon vanilla... 5 medium ripe bananas (sliced)... 45 vanilla wafers...
Preheat oven to 350 degrees...
Mix 1/2 cup sugar, the flour and salt...
Blend in 3 egg yolks and the milk... Mix well...
Place in microwave and cook on high for 2 minutes... Stir well after each 30 seconds... Repeat for another 2 minutes. Cut the time to 30 seconds and stir well... Repeat until you have a custard consistency...Usually takes 2 at 2 minutes and 3 at 30 seconds... Remove and add the vanilla... In a deep casserole dish, layer the bottom with vanilla wafers, then slices of bananas next, then finish with custard to cover... Repeat the layers... You will normally have 3 layers with custard on top...
Beat the egg whites on high speed until peaks form... Gradually add the remaining sugar (1/4 cup) while beating until stiff peaks form...
Spoon the meringue over the top of the custard being sure to seal all edges... Bake at 350 degrees for 15 - 20 minutes or until lightly browned... Top with crumbled vanilla wafers, if desired...
