Zucchini-Beef Casserole

Recipe: 2 pounds zucchini, cut into 1/4 inch rounds 1 pound ground beef 2 cups cottage cheese 1-1/2 cups schredded chedder cheese 1 can cream of mushroom soup 1 medium onion, chopped 1-1/3 cups instant rice 1 tsp garlic salt 1 tsp ground oregano 1. Saute ground beef with chopped onion until lightly browned. 2. Add rice and seasonings. 3. Place half of the sliced succhini in bottom of 9 x 13 greased pan. 4. Cover with browned beef/seasoning mixute from step one. 5. Spoon the cottage cheese over top. 6. Add remaining half of zucchini. 7. Pour can of cream of mushroom soup over all. 8. Sprinkle 1-1/2 cups of schredded chedder cheese over the top. 9. Bake uncovered in 350 degree over 35-40 minutes until bubbling. 10. Enjoy, serves about ten.
