Mom's Oatmeal Meatloaf

Recipe: This recipe was passed down from my Grandma, to my Mom, to me, and now to my Military Family. I hope you like it as much as I do. It is easy to make and tastes good too! Meatloaf Ingredients 1 lb of ground beef (I prefer at least 80% lean) 1 small bell pepper Chopped (optional) 1 onion chopped 3 cups of uncooked Old Fashioned Oatmeal 1 can of tomato paste 2 eggs 1 tsp salt 1 tsp pepper (optional) 1/2 tsp of garlic powder (more or less depending on taste preference) Meatloaf Topping Ingredients 1 can of tomato paste 2 Tbs of brown sugar (dark or light depending on taste preference) First combine the meatloaf ingredients into a large bowl. Next is the fun part! Mix well using your hands (be sure to wash your hands before mixing ingredients). Once all the ingredients are mixed, place it in a casserole, bread, or square cake pan and it into a loaf shape. Cover with tin foil and bake at 350 degrees for approximately 50 Minutes. Take meatloaf out of the oven. In a small bowl mix one can of tomato paste with the brown sugar then evenly place the tomato paste mixture on top of the meatloaf and bake for 10 more minutes. Finally, enjoy!
