Macaroni and Cheese Soup

Recipe: This is an easy comfort food recipe perfect for those cold winter evenings, and easy to double for all of those holiday pot luck dinners! 1 pkg(32oz) Chicken Broth 6oz small pasta shells (or any of your family's favorite noodles) 1 bag(16oz) broccoli, cauliflower, and carrot blend 1 1/2 cups lowfat milk 2 Tbs. all-purpose flour 2 cups shredded cheddar cheese (try Sharp cheddar, or 1 cup cheddar and 1 cup Colby/Monterey mix) 1/2 Tbs salt (optional) 1. In large saucepan, bring broth to boil, Add pasta. Return to boil. Reduce heat and let simmer, uncovered, for 5 Minutes. Add Vegetables. Cook until pasta and vegetables are tender, about 5-7 minutes. 2. Combine milk and flour in a reasealable container (eg.gladware) shake well to combine. Stir into pasta mixture. Cook and stir until thickened and bubbly. Gradually add cheese, stirring until cheese melts. Makes approx 6 servings.
