Recipe: Ingredients: 1 pre-cooked pot pie shell a ladle sausage gravy (12 oz) 8 oz whipped eggs 1 Tbls melted butter 2 c griddled mashed potatoes 1 Tbls red and yellow bell pepper and green onion mixture Preparation and Plating: Heat pot pie shell for 4 minutes in oven. In a medium pan, place butter and eggs. Sauté for approximately 2 minutes stirring frequently. In a large bowl, place 1 cup mashed potatoes; secure pie shell in diagonal upright position by gently pressing shell bottom into potatoes. Place remaining cup of potatoes in shell basin. Cover with sausage gravy, top with eggs and garnish with bell pepper and onion mixture.
