1 Lg Bx Sugar-Free Lemon Jello; 1 can (20 oz) Crushed Pineapple; 1/2 - 3/4 cup fat-free Mayo; 1 8oz fat-free Cream Cheese; 1 Pt Lite Whipped Cream.
Drain pineapple. Save juice to equal 1 cup and boil. Add juice to jello. Make sure jello is disolved well. Chill to semi-soft. In large bowl, fold whip cream into pineapple. In another bowl, whip cream cheese. Add mayo to cream cheese. Fold mayo/cream chesse mixture into pineapple. When jello is semi-jelled, fold mixture into large bowl containing pineapple. Best if sets overnight. To bring it up a notch, you can add, chopped pecans and/or coconut. |
