chicken breasts(as many as will be eating)
rosemary and thyme (I use the dried herbs but you can use fresh ones too)
your favorite rice or pasta
olive oil
favorite seasonal veggie
Before cooking, sprinkle some rosemary and thyme on each side of the chicken breasts. You can put as much or as little as you like on the chicken. After I do that, I cook up the chicken in some olive oil on the stove, cooking about 6 minutes on each side works well. It really brings out the flavor. While the chicken is cooking, you can cook up your pasts or rice, sometimes I pair it with a simple rice-a-roni sometimes with a mostaccoli or fusilli. If I am making pasta, once it is cooked to liking, I just butter and top with parmesan cheese. When your chicken is done, I like to take the veggie of choice for the meal and cook it up in the same pan as the chicken so it can soak up the flavor of the chicken. I like to pair zucchini with this meal or something like carrots or green beans. You can cook to your liking here as well, if you like your veggies more crispy and crunchy then cook it for like 5 minutes if you like it a bit softer, leave it in longer 7-10 minutes. Whole prepare time is like a half hour or so and ends up with a yummy and pretty healthy meal. |
