Recipe: Sweet Pickle Crisps ------------------------------------------------- Slice thin cucumbers to fill a gallon jar. Cover cucumbers with a brine made from one cup salt and 11 cups boiling water. Put lid on and leave for 2 weeks. Pour off brine. Cover with cold water and add two tablespoons alum. Leave 24 hours and pour off excess liquid. Cover with cold cider vinegar and add two tablespoons pickling spice. Leave vinegar for 24 hours. Drain and discard liquid. Add three cups or sugar after discarding vinegar. After 24 hours, add three more cups of sugar and another three cups after 24 additioal hours (total nine cups sugar in all). Syrup will rise as sugar dissolves. Cover and store in the same jar or transfer to other jars.
