Recipe: Chocolate Zucchini Cake ------------------------------------------------ 2-1/2 cups flour, 2-1/2 teaspoons baking powder, 1-teaspoons salt, 1-cup chopped nuts, 1/2-cup cocoa, 1-1/2 teaspoons baking soda, 1-teaspoon cinnamon, 3/4-cup soft margarine, 2-cups sugar, 3-eggs, 2-teaspoons vanilla, 1/2-cup milk, 2-cups grated zucchini, -------------------------------------------------- Combine in medium bowl the flour, baking powder, salt, nuts, cocoa, baking soda and cinnamon. In a large bowl, cream margarine and sugar until smooth. Add eggs one at a time. MIx well and stir in vanilla. Add dry ingredients alternately with milk to creamed mixture. Stir in zucchini. Pour into greased and floured 10-inch tube pan or bundt pan. Bake at 350 degrees for 1 hour. Test with toothpick. Cool in pan 15 minutes and then turn out on rack or plate. The cake moistens as it ages.
