Recipe: Thai Beef Salad ************************************************************1-bag (16 oz.) cole slaw mix, 1/4-cup seasoned rice vinegar, 2-tbs. sugar, 2-tbs. vegetable oil, 1/2-tsp. salt, 1/2-lb. thick sliced deli roast beef, 1/4-cup sliced mint, 1/2-cup fried onion rings(like durkee), Green hot sauce(optional) ************************************************************Place coleslaw mix in a large bowl. In a small, nonaluminum saucepan, bring vinegar, sugar, oil, and salt to a boil. Pour boiling dressing over coleslaw and toss to coat. Cut beef crosswise into thick strips; toss with coleslaw. Add mint to salad and toss again. Place a layer of onion rings on a plate and microwave for 30 seconds until crisp. Top salad with crisp onion rings. Serve green sauce on the side to spice up individual portions, if desired.
