Recipe: AppleJack CupCakes ************************************************************2-cups flour, 2-tbs. baking soda, 1-tsp. cinnamon, 1/2-tsp.nutmeg, 1/2-cup butter, 1-cup sugar, 1-cup raisins, 1-cup English walnuts, 1-3/4 cup applesauce, ************************************************************Preheat oven to 350 degrees. Mix the dry ingredients. Set aside. Cream the butter and sugar and stir into the dry ingredients. Add all other ingredients. Stir carefully until blended. Place cupcake liners in muffin tins for support. Spoon batter in cups till 1/2 full and bake for approx 15 to 20 minutes or until done. Icing when cool. ************************************************************Caramel Frosting: 2-cups brown sugar, 1-cup milk, 1-tbs. butter, 1-tsp. vanilla ************************************************************Boil sugar and milk to the soft boil stage, and add butter and vanilla. Let stand until creamy, and then beat until spreading consistency, and frost the cupcakes. If icing gets too hard, add a little cream to soften.
