4 medium squash, sliced
1 medium red onion, chopped
1 bell pepper, chopped
5 new red potatoes, sliced
1 tbsp olive oil
1 lb Kabalsa sausage, cut in 1/4" slices
In large skillet, mix all ingredients. Cover and cook over low heat for 20-30 minutes, stirring occasionally.
Serve with salad and garlic bread. Will serve 4-6 people. |
