Sgt Name: Earl Cleghorn Base: Retired Recipe: Earl's Eggplant Spray the bottom of a 9x12 baking dish with Pam. Wash and slice an eggplant and layer in bottom of dish. Wash and slice 2 tomatoes and place on top of eggplant. Grate Colby/Montery Jack cheese as desired on top of layer. Season with salt and pepper as desired. Place 2 slices of bacon on top. Bake in 350 degree oven for 20 minutes or until done.
