Recipe: Easy Carrot Cake This is a recipe I got today and made it my way. ******************************************************** 2-cups self-rising flour, 2-teaspoons ground cinnamon, 2-cups granulated sugar, 2-(4-ounce) jars strained carrot baby food, 4-eggs, 1-1/2 cups vegetable oil, 1/2-cup raisins, 1/2-cup chopped nuts, *********************************************************** Frosting: 1/2-cup (1/2 stick) butter, softened, 1-(8-ounce) package cream cheese, softened, 1-(16-ounce) box confectioners' sugar, 1-teaspoon pure vanilla extract, *********************************************************** Preheat oven to 325 degrees F. Grease and flour 3 round cake pans. Mix together the flour, cinnamon and sugar in a large bowl. Add the remaining ingredients and blend well with electric mixer for about 2 minutes. Pour batter into prepared pans. Bake for 25 to 30 minutes, or until golden brown. Allow to cool in pan for 5 minutes. Turn out onto waxed paper, and cool completely. For the frosting: Mix all ingredients with electric mixer and blend until smooth and creamy.
