Tomato Zucchini Frittata

Recipe: Tomato Zucchini Frittata *********************************************************** 1-tablespoon olive oil, 1-zucchini, sliced, 1/2-cup chopped green onion, 2-cloves garlic, chopped 1-(14.5 oz)can diced italian tomatoes, drained, 1/4-teaspoon black pepper, 2-eggs, 4-egg whites, 1-cup Mozzeralla Cheese, *********************************************************** Preheat oven to 350 degrees. In a skillet saute zucchini, green onions and garlic in oil. Cook for 5 minuts or until tender. Add tomatoes and black pepper. Cover and heat until Zucchini is tender. Pour into a round baking dish. Set aside. In a small bowl, beat together eggs and egg whites. Pour over vegetable mixture and sprinkle with cheese. Bake until eggs are set and knife inserted in the center comes out clean. 10 to 15 minutes. Cut into wedges and serve.
