6 to 8 Yams
1 lb. Brown Sugar
1 stick butter
1/4 c. water
1 bag mini marshmellows (optional).
Cook yams until soft,remove from stove, drain and cool.
In a skillet add brown sugar up to a pound, but it depends on how sweet you like it. Add butter and 1/4 cup of water, bring to a boil stirring consistently; turn down and let simmer. Make sure to come back to stir. Peel yams, cube and add to brown sugar mixture, spoon brown sugar over yams. If the brown sugar gets thick, a 1/4 cup of water at a time to thin out. Continue cooking about 30 to 40 mins. stirring occasionally checking to make sure the brown sugar doesn't get too thick. Once done, top with mini marshmellows (optional). Enjoy! |
