Recipe: Butter Tarts *********************************************************** 1/2 cup butter, 1-1/2 cup firmly pcked brown sugar, 2/3 cup raisins, 2 eggs, 2 tablespoons cream, 2 teaspoons vanilla, 18 pastry-lined tart shells, *********************************************************** Melt together butter and sugar over low heat. Remove from heat and add raisins. Let cool. Beat together eggs, cream and vanilla. Stir in butter mixture. Spoon into pastry-lined tart shells, 2/3 full. Bake until pastry is golden and filling puffed, but firm. This should take 15-20 minutes at 400 degrees. Remove from the molds and cool on racks. If using foil paper cups, dont remove. Bake until pastry is golden brown and filling is puffed, but firm. Remove from pans and cool on racks. Leave in paper cups if not using foil cups.
