I always cook the whole fish. Now what I do to get that fishy smell out is I soak my fresh salmon in cold water with equal parts of lemon juice. It also removes the slim you feel.
I get aluminum foil big enough to wrap the salmon in.
Spray the aluminum foil with cooking spray and place the salmon in the center.
Sprinkle both sides with salt and pepper
Place 4 tabs of butter on top and sprinkle with Rosemary
Cut slices of lemon to place on top
Fold up the aluminum foil to cover the salmon
Place in a baking dish at 350 until the meat flakes off…about 45 minutes.
Now all you have to do is slide it off into a fish dish and all the garnishment is on it for presentation
You can add sprigs of parsley and lemon slices for a more elegant look
NOTE: With this recipe you can prepare this for a BBQ and cook it on the grill
