Country Apple Potato Pie

Recipe: You'll need: 2 TBS Butter, 1 TBS oil, 1 1/2 lbs red potatoes--cut into chunks, 1 onion (minced), 1/2 tsp sugar, 1/2 tsp salt (or season all), 3 1/2 large Golden Delicious apples cut into chunks, 3/4 cup water, 1/4 cup parsley, 1 package of two deep dish pie crusts, 1 1/2 cup shredded cheese. 1. Heat butter, oil, minced onion, 1/4 salt, & sugar in a large skillet. Add potatoes and stir occasionally. Heat till tender. Add apples and cook approx 5 min. longer (till apples start to brown) 2. Heat oven 400*. Add water to skillet and bring to a boil. Reduce heat and let simmer 5-10 min.--till apples and potatoes are very tender. Stir in parsley & remaining salt. 3. Unfold one pie crust (it will be used as the top crust). Spoon in mixture and layer in shredded cheese in between. Place the pie crust on top and press edges down. Cut a slit on top. 4. Bake 25 minute at 400*. Let stand 20 min. This dish goes well with sausage--especially Polish sausage.
