Pumpkin Pie non dairy
3/4 cup granulated sugar
1/2 tsp salt
1 tsp ground cinnamon
1/2 tsp groung ginger
1/4 tsp ground cloves
2 eggs (beaten)
1 3/4 cups 100% pure pumpkin
1 1/2 cups Cream of Coconut (canned)
Combine all ingredients in order. Pour into pie shell.
Bake in preheated oven 425 for 10 minutes. Reduce heat to 350 and bake for another 20-30 minutes or until toothpick
inserted in center comes out clean. Cool and Serve warm or chilled.
Makes 1 pie.
