Easy Shrimp Scampi with Pasta

Recipe: 1 32 oz bag of shrimp, thawed with tails removed cooked pasta - either spaghetti or shells 1 cup of red and green peppers, sliced lengthwise 1 cup of fresh or canned mushrooms, sliced 1 medium onion, sliced 1/2 cup of parmesan cheese, grated olive oil. 1. Using 1/8 cup of olive oil, gently cook green and red peppers, onions and mushrooms until lightly browned. 2. Remove from oil and gently saute shrimp until opaque. Return peppers, onions and mushrooms to pan. Toss with additional olive oil until hot. 3. Drain cooked pasta, place in bowl. Put veggies and shrimp over the pasta and gently toss. Mix with parmesan cheese and serve with additional olive oil if desired. 4. Enjoy. Delicious! 5. Variation: Slice zucchini and summer squash. Saute until lightly browned, add to pepper and mushroom mixture.
