Combine 1/2 cup mashed potatoes and power sugar until it is firm enough to roll. *Make sure to smash the potatoes until there are no lumps, or your roll will have lumps in it after its completed! The mixture will become very wet; just keep adding powdered sugar. Use a rolling pin to flatten the dough. Spread peanut butter on one side and roll into jelly roll; cut into small pieces, and refrigerate.
The bigger the potato, the more dough you will have once completed. I usually use a medium size russet potato and it makes about 2 dozen pieces. |
