Recipe: Strawberry Divinity *********************************************************** 3-cups sugar, 3/4-cup white corn syrup, 3/4-cup water, 2-egg whites at room temperature, 1-(3-ounce) package strawberry gelatin, 1/2-cup flaked coconut, 1-cup chopped pecans, *********************************************************** Combine sugar, corn syrup and water in a sauce pan and bring to a boil, stirring constantly to dissolve all the sugar. Remove remaining sugar crystals for sides of pan with a damp cloth. Place a candy thermometer in the boiling syrup and cook till hard ball stage. 252 degrees. Remove the pan from the heat and let it stand for a few minutes while you prepare the egg whites. Place the egg whites in a large bowl mix until foamy. Add gelatin and beat til mixture forms soft peaks. Pour hot syrup in a fine steady stream while beating until the candy loses its gloss and will hold shape. Fold in coconut and/or pecans. Drop onto wax papaer with a teaspoon, you have to work fast, it becomes hard quick. You can decorate the pieces of candy with a half pecan or candied cherries.
