1 lb ground beef, chicken or turkey
1 can of "rotel" diced tomatoes and chiles
1 box of "Rice a Roni" spanish rice
1 bag of shredded mexi - blend cheese
Preheat oven to 350. Spray a 9x9 baking dish w/cooking spray.
Brown meat, drain and set aside. Cook rice mixture according to directions on the box.(I like to add a couple drops of hot sauce) About half way through, add the meat into the mix.Simmer until most of the liquid is absorbed. Pour into baking dish, sprinkle about 1 - 1 1/2 cups of cheese on top and bake for 25 - 30 mins or until cheese is melted and golden on top.
Serve with tortilla chips. |
