1 1/2 pounds lean ground beef
1 cup soft bread crumbs
1/2 cup onion, chopped
1 egg, beaten
1/3 cup ketchup
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
3 cups mashed potatoes
3/4 cup shredded american cheese (4 oz.)
Heat oven to 350°F. In large bowl, combine beef, bread crumbs, onion, egg, ketchup, salt and pepper; mix well. Place mixture in deep 3-quart baking dish; pat down. Bake 20 minutes. Remove from oven; drain fat.
In medium bowl, combine potatoes and 3/4 cup of the cheese; mix well. Spread over beef mixture; top with remaining 1/4 cup cheese. Bake 20 minutes.
