Ingredients:
2 Table Spoons Cooking Oil (any kind)
1/2 Green Bell Pepper
1/4 Yellow Onion
2 Cups White Rice
1 teaspoon Minced Garlic
1-2 Table Spoons ChickenTomatoe Bullion seasoning
This is what makes it that reddish color :)
4 Cups Water
In a pot or pan pour about 2 table spoons cooking oil. Add about a half bell pepper cut in long slices and about quarter section yellow onion along with 2 cups rice. Brown rice lightly just until rice is translucent. Add 4 cups water 1 teaspoon garlic (minced - look in the spice section - Lawry makes it). Also about a table spoon of chicken omatoe bullion (this can aslo be found in the spanish section of the grocery store- brand name = Korr). I get it at wal-mart. Taste the juice, that is how the rice will come out tasting. You may add more chicken omatoe seasoning or pepper and salt. Bring to a boil then cover and simmer on low. Try not to open the lid or stir the rice until it is done. This feeds my family comfortly. Just remember 1 part rice - 2 parts water.
