Potato Bacon Casserole.

Base: McGUIRE AFB, NEW JERSEY
Recipe: 4 cups of shredded hash brown potatoes. 1/2 cup of fine chopped onion. seasalt & cracked black pepper for taste. 8 oz. bacon or turkey bacon cooked & crumbled. 1 cup shredded cheddar cheese. 1 can evaporated milk. 1 large egg lightly beated OR 1/4 cup of egg sub., Preheat oven to 350F. Grease baking dish. Layer 1/2 potatoes,1/2 onion, 1/2 cooked bacon & 1/2 cheddar cheese in prepared baking dish-repeat layers. Combine milk/egg mixture in small bowl-pour evenly over potatoe mixture, salt & pepper for taste-cover with tin foil. Bake casserol for 55-60 minutes, uncover & bake for an addtional 5 minutes, let stand for 15 minutes to cool down a bit. Makes 6 servings.
