2 cups Panko(or other) bread crumbs, 3/4 cups grated Parmesan cheese, 2 T salt,1/8 tsp pepper, 2 frying chickens or equivalent pieces, 1/4 lb. butter or oleo, plus 2 T butter or oleo.
Wash and pat chicken pieces dry.Dip in melted butter and cost with bread crumb, parmesan, salt & pepper mixture. Arrange in large roasting pan and dot with remaining butter. Bake for 1 hour at 350 F. Do not turn. |
