Recipe: 2 sticks of BUTTER, sofened (real butter tastes better than margarine) 2 TBS. snipped Parsley (Fresh or dried) 1 tsp. snipped Chives (Fresh or dried) 1 clove garlic, minced ( I use refrigerated jar) 1 tsp. salt 1/4 tsp. pepper 6 WHOLE chicken breasts, boned, split, no skin 1/2 cup flour 5 eggs, well beaten 2 cups dry breadcrumbs (Progresso plain bread crumbs) vegetable oil (for frying) 1. In small bowl, blend butter, parsley, chives, garlic, salt and pepper. 2. Shape into 4 inch square on aluminum foil, wrap and freeze until firm (1 hour or so) 3. Place chicken breasts between two pieces of plastic wrap, pound to 1/4 inch thickness. lightly salt and pepper.(If breasts are big and thick, I cut them in half like you would butterfly them but all the way thru to make them thinner.) 4. Cut frozen butter square into 12 pieces 6. place 1 piece of butter in the center of each chicken breast. Fold/Roll chicken over butter, making sure the butter is sealed completely inside the chicken. (Can use toothpicks if necessary) 7. Roll chicken in flour, dip in beaten eggs, coat with breadcrumbs. Then repeat in egg and breadcrumbs. 8. Place on a wax paper cookie sheet, refrigerate for one hour. 9. Heat 3-4 inches of veg. oil in deep large skillet/deep fryer. ( I use a skillet) 10. Fry chicken till golden brown, about 8-10 minutes turning for even browning. Place in warm oven till you get them all cooked. Sounds like a lot of work, but its really not, and SOOO worth it, its Delicious!!!!~
