Santa Fe Stew
2 lbs. hamburger
2 chopped onions
1 cup rice
2 pkg. taco mix seasoning
1 pkg. Hidden Valley ranch mix
2 cans pinto beans
1 can rotel
2 cans kidney beans
2 cans corn
2 cans stewed tomatoes
Brown hamburger meat and chopped onions; drain grease.
Cook rice.
Combine all ingredients.
Cook on low for 1 hour.
Serve with tortilla chips and shredded cheese.
*This is really good!! It makes a lot too! I usually cut the recipe in half just for the three of us! It freezes really well to so if you made the full recipe and it was to much, you could always freeze it for an easy meal later on! I do usually have to add a little liquid to it the next day also. |
