Sour Cream Gooseberry Pie.

Recipe: 1 & 1/4 cups of fresh gooseberries. 1 cup of white sugar. 2 pie crust shells, frozen OR homemade crust. 2 tablespoons of all-purpose flour. 1 pinch of salt. 1 cup of sour cream. 2 eggs beaten. 1 teaspoon of vanilla extract. Preheat oven to 350F in medium bowl gently stir together gooseberries & sugar. Let stand for 15 minutes. In medium bowl stir flour and salt mix sour cream, eggs and vanilla. Add gooseberry and sugar mixture and stir to coat evenly. Spoon into pie crust place second crust over crimp edges to seal cut slits in the top to vent steam. Bake for 55 minutes in preheated oven. Cool to room temperature. Refrigerate until serving. Serves 8.
