Pumpkin Snack Cake.

Base: McGUIRE AFB, NJ.
Recipe: 1 (15-oz)can pumpkin. 1 cup of sugar. 1 cup of brown sugar packed. 1/2 cup of melted butter OR 'I Can't Believe its Butter.' 4 eggs. 2 teaspoons of vanilla extract. 1 & 1/2 cups of all-purpose flour. 2 & 1/2 teaspoons of pumpkin pie spice. 1 teaspoons of baking powder. 1/2 teaspoons of baking soda. 1/4 teaspoons of salt. 1 cup of raisins. 1/2 cup of chopped walnuts. 16-oz plastic can of cream cheese frosting. Blend pumpkin,sugars,butter,eggs and vanilla in a large bowl with an electric mixer on medium speed. Combine dry ingredients in a small bowl stir into pumpkin mixture. Add raisins and nuts. Pour into a greased 13"x9" baking pan. Bake at 350F for 35 to 40 minutes until a toothpick tests clean. Cool. Frost let stand until set. Cut into squares. Makes 2 dozen.
