One-Dish Halibut

Recipe: 1 lb halibut fillets or steaks 1 lb mixed frozen vegetables 1/4 cup lemon juice 1 tbsp olive oil 1/4 tsp lemon pepper seasoning 1 Roma tomato, diced 1/4 cup parsley, chopped Place vegetables in a microwave-proof baking dish. Cover dish with plastic wrap; turn back one corner. Microwave on high 2 1/2 minutes. Stir. Lay halibut over vegetables. Mix lemon juice, olive oil, and lemon pepper in a small bowl. Pour over fish. Cover dish with microwave wrap. Turn back one corner and microwave on high 4-5 minutes or until fish just flakes when tested with a fork. Let stand 1-2 minutes to complete cooking. Garnish with tomato and parsley.
