Old-Fashioned Split Pea Soup |

2 or 3 pound ham end
1 carrot, pared
1 onion
2 medium size potatoes, pared
3 quarts boiling water
1 cup dried split peas, soaked for several hours to
soften
2 tablespoons catsup
Place ham, carrot, onion, whole potatoes, and boiling water in a
large kettle. Boil 1 hour. Remove ham.
Rub vegetables through a strainer. Skin ham and return to the
stock with strained vegetables. Add split
peas and boil for 1 hour. Season with salt and pepper and add
catsup. Remove ham and serve as a
meat course. Thin soup with boiling water if too thick.
Serves 6.
Use pre-soaked Lima beans in place of split peas and add 3/4-cup
diced celery. |
