Chicken Veggie Stir Fry

Recipe: Ingredients 2 chicken breast, no skin, no bone 2 Tb canola oil 2 Tb soy sauce 1 1/2 Tb cornstarch 1 lg. red bellpepper 1 med. red onion, cut 1/4 inch thick 1 lg. brocalli spear, separated into florets 3/4 chicken broth 1/4 tsp. red pepper flakes 2 cloves garlic, crushed 8 oz. waterchestnuts, canned, drained Procedure 1. Cut the chicken into cubes. Place the chicken in a bowl and add oil, half the soy sauce and half the cornstarch. Toss to coat chicken. 2. Prepare veggies. 3. In a small bowl, combine broth, sugar, red pepper flakes, and remaining soy sauce and cornstarch. 4. In a large skillet, heat 1/2 T oil to med. heat. Add chicken. Cook 2-3 min. or until chicken is opaque. Transfer chicken to plate. 5. Add remaining oil, pepper, onion, brocalli, garlic, and stir fry until onions start to wilt. Add water chestnuts and chicken. Add broth mixture and bring to a boil. Cook, stirring constantly until the veggies are crisp-tender and the chicken is cooked. Serve hot over steamed rice.
