Recipe: |
2 tablespoons of zesty italian dressing.
1/4 cup of green onions,chopped.
1/2 cup asparagus, chopped.
4 eggs.
seasalt & cracked black pepper for taste.
2/3 cup of plum tomatoes, chopped
2 slices of smoked ham, chopped.
1/2 cup of shredded cheddar cheese,*divided.
Preheat oven to 350F.
Heat up dressing in a small ovenproof nonstick skillet on medium high heat.
Add onions, salt, pepper & asparagus, cook for 3 minutes stirring occasionally.
Beat eggs lightly in bowl, stir in tomoatoes, ham, 1/4 cup of cheese, pour in skillet cook without stirring 3-4 minutes.
Sprinkle with remaining 1/4 cup cheese.
Bake in skillet, uncovered for 20 minutes until center is set.
Let stand 5 minutes to set up, cut into wedges, sprinkle with fresh parsley.
Makes 2 servings.
