No Fuss Tex Mex Roll Ups.

Recipe: 1 lb. of lean ground beef. 2 cups of chopped red bell peppers (approx.2 medium size.) 1 tablespoon of chili powder. seasalt & crack black pepper to taste. 1/2 cup of sour cream. 1/2 cup of shredded cheddar cheese,divided. 1/4 cup of zesty italian dressing. 1/2 cup of salsa. 8 flour tortillas. Brown meat in large nonstick pan on medium heat, drain fat. Stir in peppers, salt, pepper & chili powder, cook for 5 minutes or until peppers are crisp-tender like, stirring occasionally, remove from heat. Stir in sour cream & 1/4 cup of cheese. Spoon approx.,1/3 cups of meat mixture onto each tortilla. Roll up and arrange in 13x9inch baking pan. Drizzle dressing on top with salsa and remaining 1/4 cup of cheese. Broil in the oven for 3-5 minutes or until cheese is melted. Makes 4 servings.
