Chilaquiles

PAM Original No-Stick Cooking Spray,
1/2-package (16 ounce package) frozen kernel corn, thawed,
1-medium sweet onion, chopped (1/2 cup),
1-can (10 ounces) RoTel Original Diced Tomatoes & Green Chilies, undrained),
1-can (8 ounces) Tomato Sauce,
4-ounces tortilla chips, broken (about 2 cups),
1-cup (4 ounces) shredded reduced-fat cheddar cheese,
sour cream (optional),

Directions:
1. Preheat oven to 350 degrees F. Heat large skillet sprayed with cooking spray 1 minute over medium-high heat. Add corn and onion. Cook 5 minutes, or until onion is translucent, stirring frequently. Combine diced tomatoes with their juice and tomato sauce in small bowl; set aside.
2. Spray 8x8-inch baking dish with cooking spray. Place half of the chips in prepared dish. Spoon half of corn mixture over chips; ladle half of tomato sauce mixture over corn. Sprinkle evenly with half the cheese. Repeat with remaining ingredients.
3. Bake 20-25 minutes, or until cheese is bubbly. Cut into 6 pieces to serve. Serve with sour cream, if desired. |
