Easy WOW Vegetable soup |

46 oz. Vegetable juice
1 qt. beef stock
3 C. water
3 meduim potatoes cut in small cubes
2 carrots chopped small
3 stalks celery chopped small
1 cup lentils
1 small onion finely chopped
1 16oz. bag of frozen mixed vegetables
salt and pepper to taste
paprika
dash garlic
1 bay leaf (optional)
In a large dutch oven add the vegetable juice, beef stock and water, bring to soft boil. Add lentils and turn down the heat to simmer. Let simmer for 10 minutes. Add chopped
potatoes, carrots, celery, and onion. Simmer another 15 minutes. Then add the frozen mixed vegetable and simmer for another 20 minutes.
Serve with crusty bread and a tossed salad.
