Skillet Potatoes w/Bacon.

Recipe: 8 slices of bacon cut up into 1 inch pieces. 2 lbs.of little red potatoes rinsed & cut into 1/4 inch slices. 1 onion sliced. 1/2 teaspoon dried thyme. 1/4 teaspoon of cracked black pepper. 1/2 teaspoon of seasalt. 1 tablespoon of chopped fresh parsley. Take a nonstick skillet, heat over medium heat, cook the bacon until crisp. Drain bacon on papertowels. Discard all fat *except 2 tablespoons of bacon fat. Add potatoes, onion, thyme, salt & pepper. Cover the skillet and cook low to medium heat stirring until potatoes are tender approx.,20 minutes. Uncover and cook stirring potatoes until browned for another 10 minutes. Serve with sprinkled parsely and any bacon pieces you may have left over. Serves 8.
