Clam Cakes.

Recipe: 1 lb clam meat,cooked. 3 eggs. 2 cups bread crumbs. 1 small yellow onion. 1 stalk of celery. 1/2 red pepper. 1/2 green pepper. Cooking oil for frying. Chop clam meat leaving slightly chunky. Chop vegetables into fine pieces. Over medium heat, sauté the vegetables in a frying pan until vegetables are tender. Pull from heat and let cool. In a large mixing bowl, add the clam meat, sautéed vegetables, bread crumbs, and the 3 eggs. Mix well and form into 3 inch cake,about 1 inch thick. Deep fry at 350F until golden brown on both sides approx.2 minutes on each side. Makes approx.,12 cakes.
