Recipe: Cranberry Pumpkin Bread **************************************** I MADE THIS TODAY, I MADE A LOAF AND SOME MUFFINS. IT WAS REALLY GOOD SO THOUGHT I WOULD SHARE. ********************************************************** Cranberry Pumpkin Bread~~~ 2-1/4 cups flour, 1-Tablespoon pumpkin pie spice, 2-teaspoons baking powder, 1/2-teaspoon salt, 1-cup dried cranberries, 2-eggs, beaten, 2-cups sugar, 1-3/4 cups pumpkin puree(15 ounce can), 1/2-cup vegetable oil, 1/2-cup chopped walnuts, *********************************************************** Heat oven to 350 degrees. Combine flour, spice, baking powder, and salt in a bowl, stir to blend the dry ingredients well. Combine eggs, sugar, pumpkin, and oil in a mixing bowl. Stir in the dry ingredients into the wet ingredients. Add cranberries and walnuts, mix thoroughly. Spoon into two greased and floured 9x5x2-inch loaf pans. Bake at 350 degrees for 55 minutes or until a wooden toothpick inserted in center comes out clean. Let cool in pan for 20 minutes. Remove and let cool completely on rack. If you make muffins cook them at 350 for around 25 minutes, check for doneness with the toothpick. Enjoy
