Tomatoe/Garlic Sea Bass

Recipe: Ingredients: 2 - Sea Bass Filets (approx. 3-4 oz each) Extra Virgin Olive Oil 1 - Large Tomatoe (seeds and inner flesh removed) 5 - Cloves Garlic (diced) Salt (Kosher preferred) Paprika Parsley Directions: Take large tomatoe and remove seeds and inner flesh, then dice and set aside. Take the garlic and dice, leaving half aside with the diced tomatoe. Heat enough olive oil over medium heat in pan to barely coat the bottom. Add half of the garlic to sautee. Season sea bass with salt and parsley. Add to the pan and cook on each side for about 3 minutes or until done. Be careful not to overcook. Discard garlic from pan. Return pan to medium heat. Add about 1 tsp. of olive oil. Add remaining garlic and tomatoes. Cook for less than one minute. Scoop over cooked sea bass. Sprinkle paprika and parsley to taste.
