Mom's Meatballs

Recipe: You will need 1 pound ground veal, 1 pound ground pork, plain bread crumbs (you can also use italian bread that you have left on the counter for two to three days ahead of time I prefer this to the ones in the store), mint, fresh grated parmesan cheese, eggs, salt and pepper. In a large bowl mix veal and ground pork together then add your mint salt, pepper, and cheese to taste. Add the bread crumbs and eggs the consistency should be moist but you should be able to form into balls and they should not fall apart. Form the mixture into ball shapes however big you would like. In a skillet put just enough extra virgin olive oil (lower in fat and lighter in taste) in your pan to coat the bottom. Place you meatballs into your hot pan until brown you can either cook them all the way in the pan or bake them the rest of the way in the oven or buy some already prepared sauce and finsih them in the sauce on the stove on low simmering for at least an hour or until meatballs are down. It is easy and delicious this was my mothers recipie which has been in our family for four generations now start from italy.
