Recipe: Bruschetta with Tomato and Mozzarella 1 Loaf of Italian bread or Baguettes, sliced 1/4 cup olive oil (preferably extra-virgin) 3-4 garlic clove, 6-7 plum tomatoes , sliced 1 package of sliced mozzarella, cut in half Fresh basil leaves enough for every piece of bread 1/4 cup balsamic vinegar Slice the tomatoes put in bowl add the balsamic vinegar to marinate. Toast the bread slices on a baking sheet in the upper third of a preheated 500 degree oven for 4 minutes, or until they are golden. While the toasts are warm, rub with the garlic cloves then brush both sides of the toasts with the oil. Add the tomato slices to the bread, the whole basil leaves and the mozzarella slices. Lightly broil till the cheese melts or to your taste.
