Squash Casserole

Recipe: Ingredients: 1 stick butter or margarine 4 c yellow squash, sliced and cut in half 1 medium onion, finely chopped 1 tsp salt ½ tsp ground black pepper 2 c cheezit crackers, crushed 2 c mild cheddar cheese, shredded 1 c whole milk or heavy whipping cream Recipe: 1. Preheat oven to 350 degrees. Melt butter in a large skillet. Add squash, onion, salt, and pepper. Cook over medium heat until squash and onion are tender. Remove from heat. 2. Set aside ¾ c of cheese and ¾ c of cheezit crackers. Add remaining ingredients to squash mixture and pour into a 2 quart casserole dish. Top with the set aside cheese and crackers. 3. Bake for 30 minutes.
