Chicken & Noodles/Dumplings

Recipe: 2-3 lbs Chicken (thighs work great)(buy de-boned if you like) Skinned Salt & Pepper to taste Anne's Flat Dumplings (found in the frozen foods) 'OR' Make your own Noodles (1 Cup of flour, 2 Egg yolks and 1/4-1/2 teas. of salt)-Roll out to very thin in a rectangle shape and slice length-wise at 1/4"-1/2" strips and let them dry some before adding then to the Chicken Broth. (Cook the same way you would any Noodle.) Put the Chicken in a large pot and cover with water, bring to a boil and cook on low until Chicken is done (an hour or so). Take the Chicken out of the pot and place however many Noodle/Dumplings you would like in the pot and cook according to the package directions on time. (We like a lot of Noodles/Dumplings, so I use most of the package if not all of it, this is just according to how much water you use.) While these are cooking, tear the Chicken off the bones and place it back in the pot to cook with the Noodles/Dumplings. This makes a good bit and is GREAT! Make some buscuits to go along with and your done.
